It is Mexican banana time again!

We have about six banana trees in our yard and they all have bananas coming ripe this month!

I am not complaining at all because I love our bananas and my husband has discovered that by cutting a few off a batch at a time and hanging them separately we can control the ripening process a certain amount.

I am particularly delighted as it gives us bananas for many different delights. We have some for the freezer so we can whir delicious breakfast drinks, for banana bread, for banana cream pies, for muffins and of course for banana pancakes.

Going Bananas in Mexico

Anyone want some fresh bananas? They are just off the tree. Mexican bananas are the best!

We have about five banana trees at any given time in our yard. Just to give you the full picture, when a banana tree produces, it has anywhere from 100 to 150 bananas at a time.

I now have lots of banana bread! I will have to make some banana muffins, banana chocolate chip cookies, banana cake and banana pancakes.

It is funny how most people want the banana baking over just the bananas!

I have written about my banana challenges before. It is an ongoing delight/burden.
Please feel free to send any banana recipes my way – better yet, feel free to come use my kitchen to make the recipe! I’ll be resting in the hammock under the bananas watching them ripen. I hope the neighbors are ready for more.

I love my Mexican bananas!

Living in Mexico we now have banana trees in our yard! How cool is that?

I’m currently waiting for the next batch to ripen. Family and friends are eagerly awaiting banana bread, banana pancakes, banana smoothies, banana piña coladas, and banana cream pie.

The only little challenge is that the whole batch of 200 or so bananas often all comes ripe at the same time. Well this makes our neighbors and friends happy - at least at first - after awhile they start running the other way when they see us – oh no, not more bananas please. Interestingly they can’t get enough banana bread?!

Feel free to share any great banana recipes you have with me as I am in the preparation and anticipation stage now! Later, I may be tired of bananas....but then I forget and I anticipate the next batch yet again. I love my banana trees!
